Avial – Yam and Gourd

Method

Step 1: Grind grated coconut, green chillies, and cumin seeds into a paste.
Step 2: Peel yam, banana, ash gourd, red pumpkin. Cut into 2 cm long strips.
Step 3: Cut drum sticks 4 cm long pieces and broad beans cut into 2 and 1/2 cm long pieces
Step 4: Pour enough water to cover the vegetables, with salt, and ground paste (except drumsticks).
Step 5: Cook in low flame till vegetables are soft.
Step 6: Heat oil in a "kadai" - season with cumin seeds, curry leaves and drumsticks, fry for few minutes until fade colour.
Step 7: Add sour beaten curds and cook for 5 minutes till drum sticks are soft.
Step 8: Add cooked vegetables in curds mix. Cook in low flame until the gravy becomes thick. Keep simmer for about 1 - 2 minutes.
Step 9: Garnish with curry leaves and optionally use coconut oil. Stir serve hot with "Adai"

  • Yam - 1/4 kg
  • Ash gourd - 100 gms
  • Raw banana - 1
  • Drumstick - 1
  • Broad beans - 100 gms
  • Sour curds - 2 cup
  • Green chillies - 6
  • Fresh coconut - 1 cup (grated)
  • Turmeric powder - a pinch
  • Curry leaves - 1 sprigs
  • Oil - 3 tbsp
  • Salt to taste
