Baked Vegetable and Cheese Paratha

Method

Step 1: First maek the dough. In a basin mix together wheat flour, maida, salt and oil. Knead a pliable dough with water. Keep for 1/2 an hour.
Step 2: Make 7 balls and roll out in disc shapes. Apply ghee all over.
Step 3: Make a hole in the centre of each disc and start rolling dough with hands outwards in all directions towards the periphery, stretching 50 that the inner diameter increases.
Step 4: Finally when only a thin circular roll is left, break the roll and now shape like a Catherine wheel.
Step 5: Press with hand and roll out like a roti.
Step 6: Heat a tawa and using a little ghee or oil, cook on both sides. Keep warm.

To make filling

Step 1: Chop onion, capsicum, cabbage into fine pieces.
Step 2: Heat oil and saute onion for a minute or till it is transparent.
Step 3: Add capsicum, and saute on high temperature for 2 minutes. Add cabbage and saute for 1 minute.
Step 4: Add salt and pepper powder and tomato sauce. Mix well and remove from fire.
Step 5: In an oven- proof dish, evenly spoonful mixture down the centre of each paratha and roll.
Step 6: The parathas should be same side down in the dish.
Step 7: Sprinkle coriander leaves, cheese and chilli flakes and bake uncovered in a 175 0 c oven for 10 - 15 minutes or until the parathas are made completely.

  • Wheat flour - 1 cup
  • Maida - 1/4 cup
  • Ghee - as required
  • Oil - 2 tsp
  • Salt to taste
  • For filling

  • Onion - 1
  • Capsicum - 1
  • Cabbage - 1 cup
  • Tomato sauce - 1/2 cup
  • Pepper powder - to taste
  • For topping

  • Pizza cheese - 1 cup (Mozarella)
  • Chilli flakes - 1/2 tsp
  • Coriander leaves - 2 tbsp
