Caramel Custard

Method

Step 1: Beat eggs.
Step 2: Heat milk in a heavy vessel.
Step 3: When it starts boiling add sugar and stir till dissolved.
Step 4: Mix custard powder in little cold milk and add it to boiling milk.
Step 5: Now reduce flame and mix beaten eggs, while stirring the milk constantly.
Step 6: When it becomes thick, remove from fire.
Step 7: Add essence and mix well.
Step 8: Mix sugar and lemon juice in a pudding mould.
Step 9: Heat till sugar changtes into golden brown.
Step 10: Add water and stir till sugar dissolves completely.
Step 11: Remvoe from fire, when caramel becomes thick like honey.
Step 12: Tilt the caramel syrup in the vessel till it is coated complete bottom of the vessel.
Step 13: Allow it to cool.
Step 14: Pour custard on this carefully.
Step 15: Steam in pressure cooker for half an hour.
Step 16: Or bake in oven by keeping pudding mould in water.
Step 17: Keep in Refrigirator till it becomes cold.
Step 18: While serving, turn the mould upside down so that caramel coating comes on top.

Ingredients

  • Thick milk - 3 cups
  • Eggs - 2
  • Sugar - 3 tbsp (haeaped)
  • Vanilla essence - few drops
  • Custard powder - 1 and 1/2 tbsp
  • For Caramel

  • Sugar - 1 1/4 tbsp
  • Lemon juice - 1/2 tsp
  • Water - 2 Tb.sps
