Caramel Rice

Method

Step 1: Heat oil in a pan, fry cashewnuts and raisins and take our then fry the sliced onions till pink and keep aside.
Step 2: Wash the rice and soak in water for 20 minutes.
Step 3: Heat again little more oil in a pan, add cumin seeds, black pepper, cloves , cardamoms,
  • cinnamon stick and sugar
  • Step 4: when the sugar turns brown in colour, add ginger, green chillies, curd salt and soaked rice, stir fry for 2 minutes on low flame.
    Step 5: Add 3 1/2 cups of water and cover with a lid and allow to simmer on low flame till the rice is cooked and water is fully absorbed. Allow it cool for 15 - 20 minutes.
    Step 6: Take half of the fried cashewnuts, raisins, onions and mix well with the cooked rice gently.
    Step 7: Transfer the rice to a serving dish plate and garnish with the remaining nuts, raisins and onions and sliced tomatoes and chillies and serve hot at lunch or dinner.

    Ingredients

  • Rice - 2 cups
  • Fresh curd - 1 cup
  • Sugar - 2 tbsp
  • Onion - 1 (Sliced)
  • Black pepper - 8
  • Cumin seeds - 1/2 tsp
  • Green chillies - 4
  • Ginger - 1 small piece
  • Cloves - 4
  • Cinnamon stick - 1 small piece
  • Cashewnuts - 10 (Broken into pieces)
  • Raisins - 2 tbsp
  • Oil - 5 tsp
  • Cardamoms - 4
  • Salt to taste
