Caramel Rice
Method
Step 1: Heat oil in a pan, fry cashewnuts and raisins and take our then fry the sliced onions till pink and keep aside.Step 2: Wash the rice and soak in water for 20 minutes.
Step 3: Heat again little more oil in a pan, add cumin seeds, black pepper, cloves , cardamoms,
Step 5: Add 3 1/2 cups of water and cover with a lid and allow to simmer on low flame till the rice is cooked and water is fully absorbed. Allow it cool for 15 - 20 minutes.
Step 6: Take half of the fried cashewnuts, raisins, onions and mix well with the cooked rice gently.
Step 7: Transfer the rice to a serving dish plate and garnish with the remaining nuts, raisins and onions and sliced tomatoes and chillies and serve hot at lunch or dinner.
