Chinese Fried Rice with Egg

Method

Step 1: Cut all the vegetables into thin long pieces.
Step 2: Cook rice with enough water and little salt added to it, till the grains are separate.
Step 3: Drain the water and allow it to cool.
Step 4: Spread on a wide plate.
Step 5: Heat oil in a frying pan.
Step 6: Add onions fry for one minute, add other vegetables one by one in the order given - Carrots, beansm capsicums, cabbage and onion stalks.
Step 7: Add aji - no - moto while frying, so that vegetable are cooked fast and crisp.
Step 8: Add salt, pepper, caramel sugar, all the sauces and finally rice and mix well over a high flame,. For two to three minutes.
Step 9: Scramble eggs separately and add it.
Step 10: Remove from fire, serve with sweet and sour vegetables.

To caramelise sugar

Step 1: Heat a sauce pan, add 1 tablespoon of sugar with few drops of lemon juice and melt it till it becomes golden brown in colour.
Step 2: Add 1 tablespoon of water and dissolve the sugar.
Step 3: Allow it to boil, in a low flame, till it becomes thick syrup and honey like consistency.
Step 4: Use as in the recipe given.

Ingredients

  • Basmathi rice - 1 cup
  • Eggs - 5
  • French onions - 10 or 12
  • Onion stalks - a bunch
  • Capsicums - 2 or 3 big
  • Cabbage - 150 gms
  • Beans - 6 or 7
  • Carrot - 2
  • Oil or ghee - 3 tbsp
  • White or black pepper powder - 1/2 tsp
  • Chilli sauce - 1 and 1/2 tsp
  • Soya sauce - 2 tbsp
  • Tomato garlic sauce - 1 tbsp (Chinese salt)
  • Caramelised sugar - 1 tbsp
  • Salt - as required
