Chola Dhal Kootu
Method
Step 1: Cut coconut into 1/4 cm thick and 1/2 cm squares.Step 2: In a pan heat 1 tbsp of ghee and add coconut and fry till light brown. Remove and keep aside.
Step 3: Wash the dhal and add enough water to cover in a vessel and pressure cook till first whistle.
Step 4: Soak tamarind and take extract a thick pulp from it.
Step 5: Heat oil in a pan add whole red chillies, cloves, cinnamons, cardamoms and cumin seeds. Fry for few minutes.
Step 6: Mix tamarind extract salt turmeric powder, jaggery, fried coconut, boiled dhal, green chillies, ginger, stir fry for few minutes.
Step 7: Add enough water. Boil in a medium flame.
Step 8: When the gravy becomes thick enough pour the ghee and garnish with curry leaves and serve hot.
