Chola Dhal Kootu

Method

Step 1: Cut coconut into 1/4 cm thick and 1/2 cm squares.
Step 2: In a pan heat 1 tbsp of ghee and add coconut and fry till light brown. Remove and keep aside.
Step 3: Wash the dhal and add enough water to cover in a vessel and pressure cook till first whistle.
Step 4: Soak tamarind and take extract a thick pulp from it.
Step 5: Heat oil in a pan add whole red chillies, cloves, cinnamons, cardamoms and cumin seeds. Fry for few minutes.
Step 6: Mix tamarind extract salt turmeric powder, jaggery, fried coconut, boiled dhal, green chillies, ginger, stir fry for few minutes.
Step 7: Add enough water. Boil in a medium flame.
Step 8: When the gravy becomes thick enough pour the ghee and garnish with curry leaves and serve hot.

  • Bengal gram dhal - 1 cup
  • Fresh coconut - 1 tsbp
  • Ginger - 1 small piece (chopped)
  • Green chillies - 6 (slit)
  • Oil - 1 tbsp
  • Ghee - 1 tbsp
  • Jaggery - 1 tbsp (crushed)
  • Turmeric powder - 1 tsp
  • Cumin seeds - 1 tsp
  • Whole dry red chillies - 2
  • Cloves - 2
  • Cinnamon - 1 stick
  • Cardamoms - 2
  • Salt to taste
  • Tamarind - medium lime sized
