Colourful Feasting Rice

Method

Step 1: Wash the rice and soak in 3 different cups.
Step 2: clean spinach and boil it and grind into a paste.
Step 3: Peel beetroot and cut into long thin strips.
Step 4: Heat oil in a pressure pan, put the cumin seeds, black pepper and salt, roast them and keep aside.
Step 5: Take pressure pan bowl and put 1 cup of soaked raw rice and add spinach paste with enoungh water cook the rice till boil and add roasted ingredients to a mixture and stir and keep aside. (First rice).
Step 6: In a similar way put another cup of rice in another pan bowl, mix the beetroot with enough water and cook till done. (Second rice)
Step 7: In the third pressure pan bowl, put the soaked 1 cup rice with turmeric powder and enough water, cook till done. (Third rice)
Step 8: In a big tray make a layer of green rice on it, make a second layer of pink rice and a third layer of yellow rice.
Step 9: Garrish almonds, cashewnuts, raisins and serve with tomato chutney.

Ingredients

  • Rice - 2 cups
  • Spinach - 2 medium bunches
  • Beetroot - 3
  • Cumin seeds - 1 tsp
  • Almonds - 6 (Sliced)
  • Raisins - 2 tbsp
  • Cashewnuts - 6 (Cliced)
  • Turmeric powder - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Oil - 3 tbsp
  • Salt to taste
