Creamy Spinach with Crunchy Almonds
Spinach is sauteed in butter and mixed with curd to give it a creamy texture. A touch of grated nutmeg gives it an unusual flavour. The chopped and fried almonds stirred in later make it crunchy. The combination is lethal, especially when served with hot rotis

Step 2: Add sliced onions and cook for a few minutes. Add spinach little by little so that the butter coasting will be smeared.
Step 3: Add salt, grated nutmeg and green chillies. Stir in the curds into this mixture and transfer into another bowl.
Step 4: Fry the almonds in the remaining butter till golden brown and mix with the spinach mixture.
Step 5: Serve with chapattis
Spinach - 8 bunches
Butter - 2 tbsp
Onion chopped - 3 tbsp
Salt to taste
Nutmeg - 1 tbsp
Grated , Green chillies - 5 to 6
Slit Curds - 5 tbsp
Almonds - 2 tbsp (chopped)
Method
Step 1: Places the spinach in a sieve, rinse and drain. Take out the leaves and chop them. Melt half the quantity of butter in a large sauce pan.Step 2: Add sliced onions and cook for a few minutes. Add spinach little by little so that the butter coasting will be smeared.
Step 3: Add salt, grated nutmeg and green chillies. Stir in the curds into this mixture and transfer into another bowl.
Step 4: Fry the almonds in the remaining butter till golden brown and mix with the spinach mixture.
