Curd Rice

Method

Step 1: Wash the rice and soak in water for 20 minutes. Add 4 cups of water and cook it and keep cool.
Step 2: Slightly warm milk and mix curd in it. Put salt and this milk set the curd.
Step 3: Cool it, mix cucumber, grapes, green chillies
Step 4: Heat oil, put mustard, red chillies, cumin and curry leaves, cashewnuts to it.
Step 5: Fry till Cashew nuts are colour.
Step 6: Mix with rice and garnish with coriander leaves serve with hot pickles.

  • Rice - 2 cups
  • Milk - 1 cup
  • Fresh curd - 1/2 cup
  • Cucumber - 1 - 1/2 cup (Chopped)
  • Green chillies - 2
  • Red chillies - 2
  • Mustard seeds - 1 tsp
  • Cumin seeds - 1/2 tsp
  • Cashewnuts - 10
  • Grapes(Green) - 50 gms
  • Oil - 1 tbsp
  • Salt to taste
  • Curry leaves - few
  • Coriander leaves - little
  • Bengal gram - 1 tbsp (Optional)
