Dum Aloo

Method

Step 1: Boil and peel the potatoes, make holes on all sides in each potatoes with fork.
Step 2: Deep fry them on low heat till crisp.
Step 3: Heat oil and fry the ground masala for few minutes. Add tomato puree and stir fry for few minutes.
Step 4: Add curd, 1/2 cup of water and salt, Stir well.
Step 5: Boil over a low flame, when the gravy becomes thick add fried potatoes and keep in a simmer, cook till done.
Step 6: Garnish with coriander leaves and cashewnuts.

Ingredients

  • Small potatoes - 1/2 kg
  • Curd - 1 cup (whipped)
  • Tomatoes - 4 (blanched in hot water, peel the skin and make a fine paste)
  • Coriander leaves - 1 tbsp (chop finely)
  • Oil for frying
  • Oil - 2 tbsp
  • Salt to taste
  • Grind together

  • Cinnamon - 1 inch stick
  • Cloves - 5
  • Cardamoms - 4
  • Ani seeds - 1 tsp
  • Green chillies - 4
  • Red chillies - 4
  • Dhania - 2 tsp
  • Dhania leaves - 1 tbsp (Coriander leaves)
  • Poppy seeds - 1 tbsp
