Egg and Red Pumpkin Kurma

Method

Step 1: Peel and chop boiled eggs.
Step 2: Peel pumpkin.
Step 3: Grind it along with totmatoes, chillies, garlic, garam masala ingredients, poppy and coconut.
Step 4: Heat oil and fry onions till crisp.
Step 5: Add chopped eggs, ground paste, salt and chilli powder.
Step 6: Cook till it becomes thick.
Step 7: Whip curds and add it to the curry along with coconut extract.
Step 8: When it is about to boil, remove from fire. Serve garnished with finely cut coriander leaves and fried cashewnuts.

  • Hard boiled eggs - 3
  • Onion - 1 (chopped)
  • Cashewnuts - 2 tbsp (chopped)
  • Tomatoes - 2
  • Red pumpkin - 100 gms
  • Green chillies - 2
  • Garlic - 2 flakes
  • Cardamoms - 3
  • Cinnamons - 3
  • Cloves - 2
  • Poppy seeds - 2 tsps
  • Grated fresh coconut - 1 tbsp
  • Red chillies powder - 1/2 tsp
  • Coriander leaves - 2 tbsp (cut finely)
  • Coconut extract - 1/2 cup
  • Thick fresh curds - 1 cup
