Egg Fritters

Method

Step 1: Crumble hard boiled eggs, mix with raw eggs and finely crumbled rusks.
Step 2: Season with onions, ginger chilli paste and cut coriander leaves.
Step 3: Shape into small balls.
Step 4: Dredge in flour, then in beaten eggs and bread crumbs.
Step 5: Shape again and deep fry in hot oil, till golden brown.

Ingredients

  • Hard boiled eggs - 6
  • Raw eggs - 2 beaten
  • Rusks - 7
  • Salt - as required
  • Finely cut onions - 1/4 cup
  • Ginger, chilli paste - 1 tbsp
  • Coriander leaves, mint leaves
  • Cut finely - 1 Tb.sp
  • Maida - as required
  • Beaten egg - for dipping
  • Bread crumbs - for coating
