Egg Halwa

Method

Step 1: Separate egg yolks. Whip them using a clean bowl and beater.
Step 2: (The vessel should be free from moisture and oil).
Step 3: Mix sugar with 1/2 cup of water, in a heavy vessel.
Step 4: Heat till sugar dissolves completely.
Step 5: Remove from fire and allow it to cool.
Step 6: Soak almonds in hot water for half an hour.
Step 7: Remove the outer skin.
Step 8: Wipe them dry and fry it in hot ghee till golden brown.
Step 9: Grind it into paste.
Step 10: Mix sugar syrup, ground almonds, beaten egg yolks, spice powders and saffron (dissolve saffron in warm milk).
Step 11: Mix it with cold ghee.
Step 12: Heat this in a heavy kadai stirring constantly, in medium flame.
Step 13: When mixture reached halwa consistency (or when ghee separates) remove from fire.
Step 14: Strain off excess ghee.
Step 15: Serve cold.

Ingredients

  • Egg yolks - 8
  • Sugar - 1 and 1/2 cups
  • Ghee - 1 cup
  • Almonds - 1/2 cup
  • Cardamom powder - 1/4 tsp
  • Dry ginger powder - 1/4 tsp
  • Saffron - a pinch
