Egg Kurma with Curds

Method

Step 1: Cut onions and tomatoes finely.
Step 2: Heat oil, fry onions.
Step 3: When it turns brown add tomatoes and fry well till it becomes pulpy.
Step 4: Add turmeric, salt, dhania powder, curds and ground coconut mixture.
Step 5: Add enough water and allow it to boil.
Step 6: Simmer, break eggs one by one on the gravy.
Step 7: Cook till set.
Step 8: Sprinkle pepper on the top.
Step 9: Fry cashewnuts in ghee and garnish it.

Variation

Step 10: Scrambled eggs can be added to the above receipe.
Step 11: In that case reduce water and make the gravy thick.

Ingredients

  • Eggs - 6
  • Oil - 2 tbsp
  • Scraped coconut - 1/2 cup
  • Red chillies - 3
  • Onions - 2 or 3
  • Tomatoes - 3 or 4
  • Medium sized
  • Salt - as required
  • Turmeric powder - 1/4 tsp
  • Dhania powder - 1 and 1/2 tsp
  • Curds - 1/2 cup
  • Ground pepper - 1/2 tsp
  • Cashewnuts - 8
  • Ghee - 1 tsp
