Egg Nest

Method

Step 1: Boil eggs, remove shells, cut digagonally into two.
Step 2: Remove yellow and keep aside.
Step 3: Cook peas, drain water, mix with salt, chilli powder, amchur and finely cut onions.
Step 4: Fill the cavities of egg with this mixture carefully, stick both pieces together carefully with maida paste.
Step 5: Boil potatoes in pressure cooker, peel and mash.
Step 6: Mix with salt, ginger chilli paste, garam masala powder, and the yellow of the egg which is removed from the eggs.
Step 7: Mash well and apply on top of boiled egg.
Step 8: Dip in beaten eggs and roll on vermicelli bits, till it is covered completely.
Step 9: Deep fry in hot oil till brown on top.
Step 10: Cut into two and serve with ketchup, and mint chutney. (Maida paste - Mix maida with little water)

Ingredients

  • Boiled eggs - 2
  • Potatoes - 4
  • Onion - 1
  • Cooked peas - 1/2 cup
  • Salt - as required
  • Chilli powder - 1/2 tsp
  • Amchur (or) dry mango powder - 1/4 tso
  • Vermicelli - 1/2 cup (broken into small pieces)
  • Beaten eggs - 2
  • Green chilli, ginger paste - 1 tsp
  • Garam masala powder - 1/2 tsp
  • Maida paste - 1 Tb.sp
