Floating Island

Method

Step 1: Remove yolks from white carefully.
Step 2: Add a pinch of salt to the whites and beat stiffly with powdered sugar.
Step 3: It should form peaks after beating.
Step 4: Boil milk in a flat dish, simmer, add a teaspoon of meringue (beaten egg white) cook till it sets, turn and cook till it is done.
Step 5: Remove carefully and keep on a wet cloth, which is placed on a flat plate.
Step 6: Use up all the meringue and keep separately.
Step 7: Beat egg yolks with little sugar and add it, to the remaining milk, (which is used to cook whites) and make custard by keeping inside a pan of boiling water Double boiling).
Step 8: Make a thick custard.
Step 9: Dissolve sugar after removing from fire.
Step 10: For serving, pour little custard in small flat dishes, top with one meringue (cooked) and pour little
Step 11: Caramelised sugar on top. Serve chilled.
