Fresh Coconut Rice

Method

Step 1: Wash the rice and soak in water for 20 minutes. Drain and add 3 cups of fresh water and coconut milk, cook till done.
Step 2: Invert them on tray and separate grains.
Step 3: Heat oil in a pan, add mustard seeds, when are start crackling add black gram, bengal gram and pepper powder, asafoetidam, salt and finally cashewnuts curry leaves and red chillies, green chillies.
Step 4: Fry till colour (dhals and cashewnuts) and add grated fresh coconut. Stir.
Step 5: Mix with the cooked rice, stir and garnish with coriander leaves and serve.

Ingredients

  • Rice - 2 cups
  • Fresh coconut - 1 cup (Grated)
  • Coconut (Thick) milk - 1 cup
  • Red chillies - 4
  • Green chillies - 3
  • Cashewnuts - 3 tbsp
  • Mustard seeds - 1 tsp
  • Black gram - 2 tsp
  • Bengal gram - 2 tbsp
  • Asafoetida - A pinch
  • Oil - 3 tbsp (Coconut oil if like)
  • Curry leaves - 2 springs
  • Pepper powder - 1 tsp
