Fresh Coriander Rice with Chillies

Method

Step 1: Wash the rice and soak in water for 20 minutes. Add 3 1/2 cups of fresh water and cook till done.
Step 2: Chop spring onion into 1 inch length.
Step 3: Chop coriander leaves into haveless.
Step 4: Slit green chillies into lenglthwise.
Step 5: Peel potatoes and cut into 4 cm long pieces like (French fries) and blanch in hot water for 5 minutes.
Step 6: Deep - fry in hot oil till golden colour and keep aside.
Step 7: Heat oil in a tawa, add mustard, cumin, green chillies, red chillies and fry for while and add spring onions, fry till soft and coriander leaves, turmeric powder, stir fry again one more minute. Remove from fire.
Step 8: Mix salt and cooked rice, stir gently, Serve with french fries.

  • Rice - 2 cups
  • Potatoes - 3
  • Spring onion - 1 bunch
  • Fresh coriander leaves - 1 bunch
  • Green chillies - 2
  • Red chillies - 2
  • Turmeric powder - A pinch
  • Mustard seeds - 1 tsp
  • Cumin seeds - A pinch
  • Oil - 3 tbsp
  • Salt to taste
  • Oil for deep - frying
