Fresh Mint Rice

Method

Step 1: Wash the rice and soak in water for 20 minutes. Drain colander and add 3 1/2 cups of fresh water and cook till done.
Step 2: Dry roast black gram dhal till light golden colour.
Step 3: Heat tsp of oil in a 'Kadai', add mint leaves and green chillies, fry till mint leaves sound is lost.
Step 4: Grind roasted gram, mint leaves with green chillies, fresh curd, ginger and grated coconut into a fine paste, by adding water from time to time.
Step 5: Heat oil in a 'tawa' and add mustard seeds, when it starts crackling add ground paste, turmeric powder with salt, stir fry for a minute. Remove from fire.
Step 6: Now mix with cooked rice and stir properly, over rice
Step 7: Serve hot with Dhal vadai.

Ingredients

  • Rice - 2 cups
  • Fresh mint leaves - 1 Handful bunch
  • Green chillies - 4 (Slit lengthwise)
  • Fresh curd - 4/3 cups
  • Grated coconut - 2 tbsp
  • Ginger - 1 inch piece
  • Black gram dhal - 2 tsp
  • Mustard seeds - 1 tsp
  • Oil - 3 tbsp
  • Salt to taste
  • Turmeric powder - A pinch
