Fried Cashews in Peanut Curry

Method

Step 1: Soak raisins in water for 1 hour. Drain and keep aside.
Step 2: Heat oil and fry cashewnuts to a golden brown. Keep aside.
Step 3: Heat 2 tbsp of oil in a pan add cumin powder, chilli powder dhania powder, ground paste, tomatoes, turmeric powder, salt and fry well.
Step 4: Add soaked raisins, peanut powder and enough water to prepare a curry . Bring to a boil.
Step 5: Remove from fire and add fried cashewnuts.
Step 6: Garnish with coriander leaves and lime rings. Serve hot.

Ingredients

  • Cashewnuts - 30
  • Peanuts - 1/2 cup (coarsely powder)
  • Tomatoes - 3 (chopped)
  • Raisins - 10 - 12
  • Dhania powder - 1 tsp
  • Chilli powder - 1 tsp
  • Turmeric powder - 1 tsp
  • Oil as - required
  • Salt to taste
  • Coriander leaves - small bunch
  • Lemon - 1 (cut into round)
  • Grind together

  • Ginger - small piece
  • Pepper - 3
