Green Curry

Method

Step 1: Cut onions, tomatoes and green leaves finely.
Step 2: Heat butter in a pan, season with aniseed (sombu) when it splutters add onions and fry for a minute.
Step 3: Mix in tomatoes.
Step 4: Cook till it becomes soft.
Step 5: Put all the minced leaves and fry over a low flame.
Step 6: Sprinkle very little water if necessary.
Step 7: Add broken eggs and other ingredients, continue stirring till it is scrambled well.
Step 8: Add lime juice before removing from fire.
Step 9: Serve with chappathis.

Ingredients

  • Eggs - 6
  • Mint leaves - 1 small bunch
  • Coriander leaves - 1 bunch
  • Fenugreek leaves - 2 bunches
  • Onions - 3
  • Tomatoes - 4
  • Green chillies - 2 minced
  • Salt - as desired
  • Chilli powder - 1/2 tsp
  • Turmeric powder - 1/4tsp
  • Garam masala - 1/2 tsp
  • Oil or butter - 1 and 1/2 tbsp
