Hot Egg Kolumbu for Rice

Method

Step 1: Grate coconut and take extract from it with enough water.
Step 2: Grind together fried dhania, jeera, red chillies and small onion.
Step 3: Mix the ground masala with coconut exract.
Step 4: Heat oil, season with jeera, fry onions.
Step 5: When it becomes transluscent add coconut extract with the ground mixture.
Step 6: Add enough salt and turmeric powder.
Step 7: Pour just enough water.
Step 8: Allow it to boil.
Step 9: Reduce flame completely.
Step 10: Break eggs one by one and pour on top of gravy side by side.
Step 11: Do not disturb till eggs are set.
Step 12: Garnish with finely cut coriander leaves.

Variations

  • Tomato paste can be added. Boil eggs and do the same recipe.

  • Eggs - 6
  • Red chillies - 5
  • Coconut - 1 small
  • Dhania - tbsp
  • Jeera - 1 tsp
  • Salt - as desired
  • Small onions - 10 to 15
  • Turmeric powder - 1/2 tsp
  • Big onions - 2 (cut finely)
