Mehod

Step 1: Wash dhal and rice soak separately in water for 6 hours.
Step 2: Grind dhal without more water till it is very fine.
Step 3: Grind rice, adding a water from time to time to a coarse paste.
Step 4: Mix together dhal and rice batter, add salt and mix well.
Step 5: Keep to ferment over night. When the mixture double din size and should be thick and of flowing consistency. (Add soda - bicard and stir it).
Step 6: Grease idli moulds, pour the batter and steam for 10 - 15 minutes or till they are done.
Step 7: Use as desired for fusion cooking.
Step 8: Topping with Tomato slices, Cashew nut, etc are optional and adds to the visual treat.
Step 9: Serve hot with Medu vada's, chutney and sambar.

  • Boiled (Raw) rice - 2 cups
  • Black gram (Urad dhal) - 1 cup
  • Oil for greasing
  • Salt to taste
  • Sod bicarb - A Pinch
  • (Cooking Soda)
