Ladies Finger in Coconut Milk Curry

Method

Step 1: Grind grated coconut with 1 cup of water and take extract thick milk.
Step 2: Slit green chillies vertically, cut ginger into thin strips.
Step 3: Cut ladies finger into 1 and 1/2 inch length pieces.
Step 4: Heat 1 tbsp of oil and fry the ladies finger pieces till light fade colour and keep aside
Step 5: Heat 2 tbsp of oil in a pan add sambar onions, green chillies, fry till onions are soft. Add ginger strips and ladies finger pieces, chilli powder, dhania powder fry again till masalas coated in the ladies finger and then add coconut milk.
Step 6: Allow it boil for a few minutes.
Step 7: Garnish with coriander leaves and serve hot.

Ingredients

  • Ladies finger - 1/4 kg
  • Green chillies - 4
  • Ginger - small piece
  • Red chilli powder - 1 and 1/2 tsp
  • Dhania powder - 2 and 1/2 tsp
  • Fresh grated coconut - 1/2 cup
  • Sambar onions - 1/2 cup
  • Oil - 3 tbsp
  • Salt to taste
  • Coriander leaves - 1 small bunch
