Lemon Rice
Method
Step 1: Clean and wash the rice, soak in water for 20 minutes, drain and add 3 1/2 cups of fresh water, cook the rice till three - fourths done and cool.Step 2: Heat oil and seasonings with Mustard, Bengal gram, Red Chillies and Green Chillies, Curry leaves, Asafoetida, Turmeric powder, Cashew nuts and salt.
Step 3: fry till dhal and cashewnuts golden colour. Remove from fire.
Step 4: toss the cooked rice in this mixture, sprinkle lemon juice and cook for a few minutes more.
Step 5: Stir and garnish with coriander leaves, serve hot with green mint chutney.
