Lentil Rice Pulao

Method

Step 1: Wash the rice and let in remain over night in salty water
Step 2: Soak the green gram for 3 - 4 hours.
Step 3: Dissolved saffron in 2 tbsp of water.
Step 4: Soak chick - peas in the water for 3 - 4 hours. Bring it to half boil.
Step 5: Put the rice in a pressure pan, add little salt and 3 1/2 cups of water and boil for 5 minutes. Add the green lentil, simmer until the rice is almost tender.
Step 6: Add the chick - peas and butter, cover it with aluminum foil, and place a tight - fitting lit on it.
Step 7: Place the pan in a preheated oven (200c/3750F) and steam for half an hour.
Step 8: Remove the lid and add saffron dissolved in warm water, cook further for 5 minutes.
Step 9: Stir with fork, then oil a mould and press in the rice very tightly.
Step 10: Leave to stand for a few minutes, turn out onto a serving plate and serve hot.

  • Rice - 2 cups
  • Lentil (Whole green gram) - 1/2 cup
  • Chick - peas - 100gms
  • Saffron - 1 tsp
  • Fresh butter - 100 gms
  • Salt to taste
