Mexican Nutty Rice

Method

Step 1: Wash the rice and soak in water for 20 minutes.
Step 2: Soak red chillies in water for 30 minutes.
Step 3: Chop tomatoes finely.
Step 4: Heat oil in a pressure pan, add ground paste in it. Fry for a minute, add soaked rice, salt and 4 cups of water.
Step 5: Bring it to boil, then add peanuts and chopped tomatoes.
Step 6: Cook covered in a medium flame for 10 - 12 minutes.
Step 7: Garnish with soaked red chillies and tomato slices, coriander leaves, peanuts and serve hot.

Ingredients

  • Rice - 2 1.2 cups
  • Peanuts - 1 cup (Roasted)
  • Tomatoes - 3
  • Red chillies - 3
  • Oil - 3 tbsp
  • Salt to taste
  • Grind together

  • Red chillies - 4
  • Ginger - 1 small piece
  • Garlic - 6 - 8 flakes
  • Grated dry coconut (Copra) - 2 tbsp
