Mixed Vegetable Curry with Egg

Method

Step 1: Cut onions finely.
Step 2: Boil diced carrots and beans.
Step 3: Pound coconut, pepper and green chillies.
Step 4: Heat oil, add onions fry for two minutes. Add boiled vegetables with salt and fry.
Step 5: Break eggs one by one to the curry and keep frying, when it is still moist add pound coconut mixture fry for a minute.
Step 6: Remove from heat and serve with rice.

Ingredients

  • Finely cut carrot - 1/4 cup
  • Beans - 1/4 cup
  • Onions - 2
  • Eggs - 4
  • Salt - as desired
  • Coconut - 2 tbsps
  • Pepper - 1/2 tsp
  • Green chillies - 1 or 2
  • Oil - 1 or 2 tbsps
