Mixed Vegetable Pulao (Khichdi)
Method
Step 1: Wash the rice and soak in water for 20 minutes.Step 2: Dice mixed vegetables into desired size.
Step 3: Heat oil or ghee in a pressure pan. Seasonings with camin, cloves, cardamoms, cinnamon and bay leaf, stir fry for seconds.
Step 4: Add ground paste, fry till smells is good. Add diced vegetable and green peas, double beans, cauliflower, broccoli, stir fry for 1 - 2 minutes.
Step 5: Now add soaked rice with 41/2 cups of water. Close pressure pan and bring it to boil until the rice mixture is tender.
Step 6: Over pulao stir gently and serve hot with onion raitha.
