Navaratan Pulao

For Garnishing

Step 1: Fried cashewnuts - 2 tbsp
Step 2: Fried Raisins - 2 tbsp
Step 3: Fried onions - 1/2 cup (Slice and fry in oil till brown and crisp)
Step 4: Green chillies - 1 tbsp(Chopped)
Step 5: Coriander leaves - little (copped)

Method

Step 1: Wash the rice and soak in water for 20 minutes.
Step 2: Heat oil in a pressure pan, add cumin, cloves, cinnamon and bay leaf to hot oil and stir till cumin splutter.
Step 3: Add soaked rice and salt with 3 1/2 cups of fresh water.
Step 4: Cook the rice till tender.
Step 5: Dice all the vegetables and boil till tender and keep aside.
Step 6: Chop onion and tomato finely
Step 7: Divide cooked rice into 3 portions.
Step 8: To first portion, add fried paneer cubes and fried onions, stir well and keep aside.
Step 9: To second portaion, add half quantity of boiled vegetables with tomatoes and pour orange food colour, keep aside.
Step 10: To third portion, add remaining half of the vegetables and pour green food colour, keep aside.
Step 11: Take round bowl and grease it keep. Sprinkle the fried nuts then green chillies and coriander leaves. After that sprinkle the fried onions.
Step 12: Now give the layer of coloured 1 st portions rices press lightly. Add a layer of white portion rice and press again.
Step 13: Now add third portion layer of coloured rice. Cover with foil and keep aside.
Step 14: Back in hot even for 10 minutes. Take out of oven and remove the foil.
Step 15: Cover with inverted serving platter upturn the tin, give a jerk and remove the in tin very carefully.
Step 16: Serve colourfully.

  • Rice - 2 cups
  • Cumin seeds - 1 tsp
  • Cloves - 4
  • Cinnamon - 1 inch stick
  • Bay leaf - f
  • Oil - 2 tsp
  • Salt - 2 tsp

  • Carrots - 2
  • Green peas - 100 gms
  • Fresh beans - 100 gms
  • Onion - 1
  • Tomato - 1
  • Paneer - 50 gms (Fry in oil till colour)
  • Orange food colour - A few drops
  • Green food colour - A few drops
