Pan Adai – Mould Base

Method

Step 1: Wash and soak dhal and rice with peanuts, dhania and red chillies, curry leaves, together with enough water for 5 - 6 hours.
Step 2: Grind soaked ingredients with salt till ti thick paste. (The dhal and rice should be slightly coarse).
Step 3: Mix well and allow to ferment overnight.
Step 4: Next day add chopped onions and stir it.
Step 5: Heat shallow type pan, grease more oil and take batter and make in your hand 4 cm round and even flat shape. (It means small shallow type. Put in shallow frying pan 3 to 4 pieces.
Step 6: Cover suitable lid and turn 2 - 3 minutes one time and check oils is required or not.
Step 7: Fry and steam till under very brown colour.
Step 8: Use all batter thus.
Step 9: Serve with pickles or suitable chutney.

Ingredients

  • Boiled (Raw) rice - 2 cips
  • Red gram - 1 and 1/2 cup
  • Red chillies - 6 - 8
  • Dhania - 3 tbsp
  • Peanuts -150 gms
  • Curry leaves - A handful
  • Oil - as required
  • Salt to taste
  • Onion - 4 -5 (finely chopped)
  • Peanuts=Groundnuts
