Pineapple Fudge

Method

Step 1: Sieve flour with baking powder and salt for three times.
Step 2: Separate egg yolks from whites carefully.
Step 3: Apply butter generously in a baking dish and arrange pine apple slices on that.
Step 4: Pour caramelised sugar, in between the gaps.
Step 5: Beat egg yolks and sugar.
Step 6: Add essence and pineapple juice and beat well.
Step 7: Remove the beater.
Step 8: With a wooden spoon mix maida to the mixture gently.
Step 9: Beat egg whites separately till stiff.
Step 10: Fold this to the cake mixture carefully and pour on arranged pineapple slices, bake at 180 0c for half an hour or till it is baked.
Step 11: After baking remove in a serving dish upside down, arrange walnut pieces and cherries on top.

Ingredients

  • Soft butter - 2 tbsp
  • Caramelised sugar - 2 tbsp
  • Salt - a pinch
  • Pineapple slices - 1 small tin
