Pineapple Pudding

Method

Step 1: Add gelatin over pineapple juice in a small saucepan let it stand 5 mins to soften.
Step 2: Add Almond extract.
Step 3: Heat just until gelatin melts.
Step 4: Let the pudding to cool down to room temprature.
Step 5: Add pineapple chunks, cottage cheese and sugar in a blender or food processor.
Step 6: Process until pureed.
Step 7: Mix in gelatin mixture.
Step 8: Combine whipped topping mix and milk.
Step 9: Beat until stiff peaks form.
Step 10: Fold into gelatin mixture.
Step 11: Pour into a bowl
Step 12: Serve it cold.

Ingredients

  • 250 gms unflavored gelatin
  • 1/2 unsweetened pineapple juice
  • 1 tsp almond extract
  • 1/2 cup crushed pineapple
  • 1 cup cottage cheese
  • Sugar - 2 tsp
  • 1 whipped topping
  • 1/2 cup milk
