Plain Chappati
Method
Step 1: Sift salt, soda- bicarb and flour together.Step 2: Rub ghee into it till it resembles breadcrumbs (1 tbsp).
Step 3: Knead into a dough with water, curd and milk.
Step 4: Make a ball of 2 and 1/2 - 3 inch diameter and roll using dry flour and a rolling pin.
Step 5: Put 1 tsp of ghee on the top side and layer it all over the rolled side.
Step 6: Sprinkle dry flour over it.
Step 7: Now cut a radius from the middle to an edge and roll in swiss roll fashion till the whole is rolled.
Step 8: Press this coned paratha (chappati) into a flat ball. Again roll it with a rolling pin and dry flour.
Step 9: Now put this rolled chappati on a hot tawa. Cook both sides lightly first and then with ghee oroil.
Step 10: Before serving, crumble lightly with hands to open the rings.
Step 11: Serve hot with any curry with salad.
