Plantain Flower Curry

Method

Step 1: Grind mustard seeds and sugar into a paste
Step 2: Peel potatoes and cut into 1 cm pieces.
Step 3: Mix grated coconut with milk and keep aside
Step 4: Clean banana flowers and take inside floweretts thoroughly. Cut into small size, wash and squeeze out water.
Step 5: Boil banana floweretts to a colander and squeeze out water.
Step 6: Transfer banana floweretts to a colander and squeeze out water
Step 7: Heat oil in a large sized pan add cumin seeds when it splutter add potatoes, stir fry till light brown.
Step 8: Add mustard paste and boiled banana floweretts. Stir fry for few minutes.
Step 9: Add coconut milk mixture, chilli power, salt, Cook till liquid dries up stirring constantly.
Step 10: Add finely powdered garam masala spices, stir and serve hot.

  • Plantain flower - 1 (Banana flower)
  • Potatoes - 2
  • Milk - 1 cup
  • Coconut - 1 cup (grated)
  • Sugar - 1 tsp
  • Salt to taste
  • Mustard seeds - 1 tsp
  • Chilli powder - 1 tsp
  • Turmeric powder - 1 tsp
  • Garam masala powder - 1 tsp
  • Oil - 3 tbsp
