Potato Masala

Method

Step 1: Boil potatoes, peel and diced.
Step 2: Slice onions and grate carrots.
Step 3: Heat oil in a "kadai", fry the ginger and garlic paste, add the sliced onions and fry till it turns light brown.
Step 4: Add mint leaves and green peas, carrots stir well.
Step 5: Keep lower the heat and keep stirring till the green peas and carrots are done.
Step 6: Sprinkle the water as and when required and don't allow the mixture to stick to the bottom.
Step 7: when the vegetables are cooked and dry, add the ground masala powder, Amchur powder and 1/2 cup of water and add salt.
Step 8: When the masala becomes thick, Garnish with coriander leaves. Serve hot with puris or dosa.
Step 9: Heat 1 tsp of oil and fry the above ingredients then grind instead of masala powder.

Ingredients

  • Potatoes - 1/2 kg
  • Carrots - 3
  • Green peas - 1 cup
  • Onions - 3 big
  • Mint leaves - 1 small bunch
  • Amchur powder - 1/2 tsp (optional)
  • Ginger and garlic paste - 1 tbsp
  • Slat to taste
  • Oil - as required
  • To Roast

  • Red chillies - 8
  • Poppy seeds - 2 tsp
  • Cumin seeds - 1/2 tsbs
  • Cloves - 5
  • Cinnamon - 1 small stick
  • Cardamoms - 4
