Raw Papaya Surprise
Raw papaya is rarely appreciated in India. Here is a sweet which celebrates it. Select a papaya which is greenish yellow in colour and is not bitter. Taste before you start to avoid disappointment.

Cooking time: 40 minutes

Step 2: Finally, add ghee and fry till all the milk is absorbed.
Step 3: Spread on a flat plate and decorate with dry fruits and silver foil.
Papaya - 1 whole (not fully raw or fully riped)
Sugar - 3 katoris
Ghee - 2 katoris
Khoa - 1 and 1/2 katoris
Milk - 1 katori
Cardamom - 1 tbsp
Cashew nut - 3 tbsp.
Method
Step 1: Grate papaya into fine gratings. Cook in milk till tender. Add khoa, sugar, cardamom powder and cashew nut pieces and fry.Step 2: Finally, add ghee and fry till all the milk is absorbed.
Step 3: Spread on a flat plate and decorate with dry fruits and silver foil.
