Red Kidney Beans Rice

Method

Step 1: Wash the rice and soak in water for 20 minutes.
Step 2: Soak kidney beans in water in a large bowl over night. Next morning drain of the water and cook in 1 litre water till tender. (you could also use a pressure cooker)
Step 3: Take pan and add coconut milk, spring onions and green chillies. Season with salt and pepper and bring to the boil.
Step 4: Boil for 3 minutes and add soaked rice and stir well.
Step 5: Cover and simmer gently over a low flame until the rice is render and all the liquid is evaporated (about 20 - 25 minutes).
Step 6: Transfer to a serving dish and serve hot.

  • Rice - 2 cups
  • Red kidney beans - 200 gms
  • Fresh coconut milk - 3 cups
  • Spring onion - 2 tbsp (Chopped)
  • Green chillies - 3 (Chopped)
  • Pepper powder - 1/4 tsp
  • Salt to taste
