Rice Omelette

Method

Vetetable filling

Step 1: Fry diced vegetables in butter.
Step 2: Season with salt and pepper.
Step 3: Mix rice with sugar add a tiny pinch of salt, nutmeg and dash of water.
Step 4: Separate egg yolks from white.
Step 5: Mix yolks into rice.
Step 6: Whip whites until stiff and fold into the rice.
Step 7: Melt butter and fry an omelette from mixture.
Step 8: Fill it with vegetable mixture and serve at once.

Variation

  • Omit sugar from rice, proceed as above, but use a filling of sweet fruits or jam.
  • Ingredients

  • Cooked rice - 5 Tb.sps
  • Sugar - 2 tbsp
  • Pinch of salt and nut meg
  • Eggs - 4
  • Butter - as required
