Rich Paella Rice

Method

Step 1: Wash the rice and soak in water for 20 minutes.
Step 2: Slice onions and peel the tomatoes and crush fine.
Step 3: Chop cauliflower, broccoli and red capsicums, peel the carrors and chop finely.
Step 4: Heat oil in large sacucepan, add garlic and onions, stir over medium heat for about 2 minutes or until onions is soft.
Step 5: Add soaked rice. Stir over medium heat for 3 minutes, Stir broccoli, cauliflower, tomatoes and add 5 cups of water with salt to taste.
Step 6: Bring to boil, uncovered for about 10 minutes or until rice mixture is tender and most of the liquid is absorbed.
Step 7: Blanch chopped carrots in warm water and add to the cooking rice mixture along with chopped red and green capsicums, stir well.
Step 8: Remove heat, cover simmer for about 5 minutes or until capsicums are soft and stir, serve hot.
Step 9: Capsicums have seven wonderful colors in India

  • Rice - 3 cups
  • Onions - 2
  • Tomatoes - 4
  • Carrots - 2
  • Cauliflower - 1 cup
  • Broccoli - 2 cups
  • Red capsicums - 2
  • Green capsicums - 2
  • Garlic - 3 flakes (crushed)
  • Olive oil - 2 tbsp
  • Salt to taste
