Rich Saffron Pulao

Method

Step 1: Wash the rice and soak in water for 20 minutes.
Step 2: Heat ghee, put cumin seeds, cardamoms, bay leaf and add soaked rice and soaked saffron and colour powder with 3 1/2 cups of water.
Step 3: Bring it to the boil on low flame and cook it covered until water dries up.
Step 4: Add sugar and dry fruits with raisins, cook covered on a medium flame for 5 - 7 minutes.
Step 5: Pour little ghee on top of the cooked rice mixture. Keep covered for 10 minutes before servings.
Step 6: Garnish with dry fruits and serve gently.

Ingredients

  • Rice - 2 cups
  • Saffron - 1/4 tsp (Soak in warm water)
  • sugar - 1 and 1/2 cup
  • Mixed dry fruits - 1/2 cup
  • Raisins - 2 tbsp
  • Cumin seeds - 1/2 tsp
  • Cardamoms - 3 (crushed)
  • Bay leaf - 1
  • Ghee - 2 tbsp
  • Ghee - 2 tbsp
  • Edible yellow colour - 1/2 tsp
