Saffron and Cream Rice
This is an excellent dish to serve for an important party. Works well with fussy children too ! Its wonderfully fragrant and coloured. Milk can be substituted for the cream for a lighter version. This recipe also comes in handy if there are no vegetables at home and guests drop in unexpectedly. (Dry fruits come in handy too).
Preparation time: 5 minutes
Cooking time: 10 minutes
Serve: 4
Step 2: Add all the chopped dry fruits and fry for a few minutes. Now add the rice and fry for a few more minutes.
Step 3: Finally add saffron milk, beaten cream and required measure of water and salt.
Step 4: Cook till 2 whistles.
Step 5: Serve hot with masala gravy.
Step 2: Heat oil in a kadai, season slit green chillies. Now add onion paste and ginger garlic paste and fry till oil separates.
Step 3: Add tomato puree and fry for few more minutes. Add the remaining masalas and salt.
Step 4: Finally, add poppy seed and gram paste and required amount of water and simmer on low flame for 10 minutes. Keep stirring intermittently. (optional: 1 tsp of sugar and lime juice adds taste. )

Almonds - 3 tbsp
Cashews - 3 tbsp

Figs - 2 tbsp
Saffron - 1 tbsp (Rinsed),

Cream - 1 katori
Ghee - 3 tbsp
Onions - 2 nos
Ginger garlic paste - 1 tsp
Tomato puree - 2 tbsp
Poppy seeds - 2 tsp
Fried Gram Daal - 1 tsp
Dhania powder - 1 tsp
Garam masala - 1/2 tsp
Green Chillies - 4-5
Salt to taste
Oil - 2 tsp
Method
Step 1: Wash rice and keep aside. Soak saffron in 1/4 cup of milk. Take a pressure cooker and heat ghee.Step 2: Add all the chopped dry fruits and fry for a few minutes. Now add the rice and fry for a few more minutes.
