Scrambled Eggs in Tomato Curry

Method

Step 1: Heat oil and fry onions for one or two minutes.
Step 2: Pour tomato pulp and boil for few minutes.
Step 3: Add ground mixture with enough salt and little sugar.
Step 4: Boil till gravy becomes thick.
Step 5: In the mean time, heat butter in a pan and quickly scramble eggs using a fork.
Step 6: Season with salt, chilli powder and little pepper.
Step 7: Add this to the boiling gravy.
Step 8: Sprinkle garam masala powder and remove farom fire.

Variation

Step 1: Use green chillies in place of red chillies.
Step 2: Grind along with little aniseeds.
Step 3: Follow the same recipe.
Step 4: Use boiled eggs in place of scrambled eggs.

Ingredients

  • Eggs - 4
  • Onions - 2 sliced
  • Tomatoes - 3 big (grind separately)
  • Oil - 3 tbsp
  • Salt - as required
  • Butter - 2 tsps
  • Garam masala powder - 1/2 tsp
  • Grind together

  • Red chillies - 6
  • Dhania - 1 and 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Garlic - 6 flakes
  • Ginger - 1/2 inch piece
  • Coconut - 3 Tb sps (grated)
  • Coriander leaves - 1 small bunch
