Spinach and Pudina Pulao

Method

Step 1: Chop spinach, mint and onion finely
Step 2: Blanch spinach and pudina in hot water for 5 minutes. Slightly fry the green chillies and black gram then grind blanched spinach and mint, green chillies with black gram into a fine paste, then add tamarind pulp, stir in it.
Step 3: Wash the rice and soak in water for 20 minutes.
Step 4: Heat oil and lightly fry the onions and cumin seeds and add soaked rice with 3 cups of water and cook the rice till the water dries up. The rice should be only half cooked.
Step 5: Now add ground paste. Cook the remaining half cooked rice it and stir gently
Step 6: Serve hot after sprinkling coriander leaves and fried cashewnuts.

  • Rice - 2 cups
  • Spinach - 1 cups
  • Mint (Pudina)leaves - 1 cup
  • Onion - 1
  • Green chillies - 4
  • Cumin seeds - 1 tsp
  • Black gram - 1 tsp
  • Tamarind pulp - 2 tsp
  • Fried cashewnuts - little
  • Oil - 2 tbsp
  • Salt to taste
