Spinach and Pudina Pulao
Method
Step 1: Chop spinach, mint and onion finelyStep 2: Blanch spinach and pudina in hot water for 5 minutes. Slightly fry the green chillies and black gram then grind blanched spinach and mint, green chillies with black gram into a fine paste, then add tamarind pulp, stir in it.
Step 3: Wash the rice and soak in water for 20 minutes.
Step 4: Heat oil and lightly fry the onions and cumin seeds and add soaked rice with 3 cups of water and cook the rice till the water dries up. The rice should be only half cooked.
Step 5: Now add ground paste. Cook the remaining half cooked rice it and stir gently
Step 6: Serve hot after sprinkling coriander leaves and fried cashewnuts.
