The Aloo Subji
Method
Step 1: Boil potatoes peel and mash coarsely.Step 2: Heat oil in a frying pan, cumin seeds when it splutter add ground paste 1 in the oil fry for a minute. Add asafoetida, raw spices and dissolve in some water and cook on low flame until the oil comes on top and masala is cooked.
Step 3: Add curds and cook on low flame till the oil comes on top and the whole mixture thickens.
Step 4: Now add potatoes and 1 1/2 cup of water and cook till the whole mixture thickens into homogeneous curry.
Step 5: Remove from fire and add coriander leaves and the garam masala powder.
Step 6: Serve hot allow stuffed puris.
