The Aloo Subji

Method

Step 1: Boil potatoes peel and mash coarsely.
Step 2: Heat oil in a frying pan, cumin seeds when it splutter add ground paste 1 in the oil fry for a minute. Add asafoetida, raw spices and dissolve in some water and cook on low flame until the oil comes on top and masala is cooked.
Step 3: Add curds and cook on low flame till the oil comes on top and the whole mixture thickens.
Step 4: Now add potatoes and 1 1/2 cup of water and cook till the whole mixture thickens into homogeneous curry.
Step 5: Remove from fire and add coriander leaves and the garam masala powder.
Step 6: Serve hot allow stuffed puris.

Ingredients

  • Potatoes - 1/2 kg
  • Curds - 2 cups
  • Cumin seeds - 1 tsp
  • Chilli powder - 2 tbsp
  • Dhania powder - 1 tsp
  • Amchur powder - 1 tsp (Mango powder)
  • Salt to taste
  • Oil - 2 tsp
  • Grind to paste : I

  • Green chillies - 4
  • Coriander leaves - 1 small bunch
  • Ginger - 1 small piece
  • Grind to powder - II

  • Cumin seeds - 1/2 tsp
  • Pepper - 1/2 tsp
  • Cardamoms - 4
  • Cloves - 5
  • Cinnamon stick - 1 small piece
  • Nutmeg power - 1/2 tsp (Frey in a spoon of oil and grind it to powder)
