Thick Sev Curry

Method

Step 1: Mix the salt, cooking soda, chilli powder, Gram flour and add oil to mix it well. and also mix pudina powder and knead it with some water.
Step 2: Make a soft dough, make thick sized sev with the help of sev mold.
Step 3: Deep fry the sev and break it into small bits.
Step 4: Heat 2 tbsp of oil in a pan and add cumin seeds asafoetida to it. When it begins to crackle, add cinnamon stick, mix spices in 1/2 cup of water and add this solution to the oil.
Step 5: Fry it all till the oil separates from the mixture.
Step 6: Now add curds and fry till the oil separates. Add 2 cups of water and bring to boil, keep simmer for 2 minutes.
Step 7: Add sev to this curry and switch off the fire. Add garam masala and coriander leaves.
Step 8: The sev shouldn't be soaked in the curry for long, Otherwise it will dissolve into it.
Step 9: Add the sev into the gravy just before serving the dish.

Ingredients

  • Gram flour - 1 1/2 cup
  • Mint leaf powder - 2 tbsp
  • Chilli powder - 1 tsp
  • Cooking soda - 1 pinch
  • Oil for frying
  • Salt to taste
  • Oil - 2 tbsp
  • For Curry

  • Curds - 1 cup
  • Chilli powder - 1 tsp
  • Cumin Seeds - 1/2 tsp
  • Garam masala powder - 1/2 tsp
  • Cinnamon - 1 inch piece
  • A pinch of asafoetida
  • Coriander leaves - chop little
