Green Gram Dal Sundal

Step 1: Soak the Moong dal in clean water for a few hours.
Step 2: Drain and allow to sprout.
Step 3: Boil the sprouted dal till it becomes soft(but not mushy; in which case, you’ll end up with Moong Halwa).
Step 4: Soak jaggery in minimum water, dissolve and strain to remove sand.
Step 5: Boil this till it becomes bit syrupy.
Step 6: Add the boiled dal and a little ghee; keep cooking on low fire till the dal and the jaggery become a nice mass – the Sundal.
Step 7: Remove from fire. Fry a few cashew nuts in ghee and add to Sundal.
Step 8: Stir again on low fire. Remove, add the powdered cardamom and blend well. The healthy sprouted Sundal is ready.
