Pidi Kolukattai

Kolukattai is an authentic Indian sweet prepared for the spcl occasion of vinayagar chathurthi. And this is one variety called Pidi Kolukattai

Method:
Step 1: Melt the jaggery in 1 cup of water and strain it to remove the impurities.
Step 2: mix the rice flour in remaining 1 cup o water and set aside.
Step 3: in a heavy bottom pan, heat the strained jaggery and bring it to a boil.
Step 4: Stir in the rice flour mix slowly and keep stirring. add the coconut and cardomum too.
Step 5: Stir continuously, (there should be no lumps) until water is absorbed and the mixture thickens enough to be a dough.
Step 6: Switch off the stove and transfer the mixture on to a plate and let cool for about 2 to 3 minutes.
Step 7: grease your palms with gingely oil and roll portions of the dough into lemon sized balls.
Step 8: ‘pidi’ can be done by placing a ball in one palm and pressing it gently with the fingers ofthe other hand. you can even leave some kolukattais in the ball form.
Step 9: arrange them in greased idli plates. Steam for about 15 to 16 minutes. Make sure about an inch or 2 of water is heated well in the idli pot or pressure cooker before strating to steam.
Step 10: allow to cool for 0 mins and then serve.
