Vegetable Idli Delight
Method
Step 1: Dice all the vegetables finely. Chop onion, tomatoes, green chillies. Blanch in hot water. (Except tomato and green chillies)Step 2: Heat oil in a pan, saute onions and cumin seeds till onions are soft.
Step 3: Add vegetables, mixed sprouts, green chillies and stir till heated
Step 4: Add sliced idlis, tomatoes and lemon juice, salt. Cook till the contents thoroughly heated.
Step 5: Remove from fire and garnish with fried cashewnuts, coriander leaves.
Step 6: Serve hot with sauce and curd.
