Vegetable Jalfrezi
Method
Step 1: Cut all the vegetables into medium 1 1/2 in long and square pieces.Step 2: Cut onions into medium rings.
Step 3: Blanch the vegetables in salted boiling water 2 - 3 minutes, and then strain. (Except capsicum and tomatoes).
Step 4: Heat oil in a "kadai" and add cumin seeds and red chillies.
Step 5: When it starts crackling, add vinegar and onion rings.
Step 6: Saute and add ginger - garlic paste. Fry for a minute.
Step 7: Now add turmeric, chilli powders, salt to taste and chopped tomatoes and cook till the clarified fat appears on the surface.
Step 8: Add the vegetables and capsicum. Stir. Add finely garam masala powder and chopped coriander leaves, and stir. Serve hot.
